Super Quick, Easy & Healthy Red Kidney Bean Burgers

I made these burgers over the weekend and they were divine, if I do say myself! They are also super quick and easy to make and I served them with all the trimmings. I’d advice leaving out the Corona and bread bun if you want a healthier version, but nevertheless they are a lot more nutritious then your Big Mac.

I used red beans to make the burgers, which are super high fiber, iron, magnesium, phosphorus and vitamin B9. Red kidney beans also have high levels of protein, so an excellent vegetarian dish.

Serves 4

 Preparation 15-20 minutes

Cooking  – 10 -15 minutes

Ingredients

The Burgers

1 tin red kidney beans

½ green pepper

½ onion

2 cloves garlic

1 chopped chilli

1 egg

½ cup whole meal breadcrumbs

Sweet Potato Fries

4 sweet potatoes

4 sprays of low calorie oil

salt & pepper to season

Method

  1. Peel and slice sweet potato into long strips spray with oil and roast for 20 minutes at 190C.
  2. Mash red kidney beans; combine together with green pepper, onion, garlic, chilli, egg, breadcrumbs, salt and pepper.
  3. Roll into patties and either griddle or flatten and grill
  4. Serve with sides including mushrooms, tomatoes, chilli sauce, cheese (low fat), sweet potato fries, gherkins, iceberg lettuce etc. etc. Enjoy! Fx
