Hello All,

It’s that time of the week again – hump day! I cannot believe how fast the weeks are flying by and how the weekends are forever fast approaching. I guess I shouldn’t complain though as it is an indication that I’m enjoying work at the moment. Here’s a scary thought though; we are officially six months away from Christmas! Which makes me wonder how many of us have actually stuck to and achieved our New Years resolutions?!

Anyway, a slightly different post today about another aspect of my diet, which arethe vitamin and mineral supplements I consume. There has often been negative associations made about supplements such as a healthy diet should provide all the nourishment and nutrients required, leaving little argument substitute products. However, in a modern environment it is considerably different when compared to our ancestors therefore disease can often be induced even in the healthiest of diets. Hope we have all had a wonderful weekend. I had a lovely weekend back in the countryside celebrating my Mam’s birthday and feel refreshed ready for the week ahead.

So in all special occasions, cake is a necessity. After skimming through the range of sugar and fat laden cakes in the supermarket, I realised I would be silly to not try making my own one. Alas in a mad frenzy I managed to whip this fat free, gluten free rich chocolate cake within the hour. I like to hope I tricked most people by not letting them into the secret ingredients until they had tried the cake.

I don’t intentionally eat a lot of vegetarian and vegan dishes, as I love all meat. However, sometimes if I’m on a particularly tight budget one week, vegetarian and vegan options can often work out a little cheaper.

I’ve experimented with curries in the past and never managed to achieve the same diverse taste and moist texture like those from the local curry house. Albeit, the common purchased curry has often been made by an experienced chef and includes richer ingredients that often increase the saturated fat content of the dish.
